Low Carb Cauliflower Hash Browns
Ingredients
  • 12 oz grated fresh cauliflower (about ½ medium head)
  • 4 slices bacon – chopped
  • 3 oz. chopped onion
  • 1 Tablespoon butter, softened
  • salt, pepper
Instructions

Saute bacon and onion in skillet just until brown. Add in cauliflower and stir until tender and browned all over, adding butter throughout cooking. Season to taste with salt and pepper.

Yields 2 servings
